C --> you need the 'as' at the end. Between C and D , C is parallel.

My pick is A.
My two cents on this one:

B) works to sell them online, either as electronic books or
C) works and it will sell them online as either electronic books or as
D) works, and selling them online as either electronic books or as
E) works, and it will sell them online as either electronic books or

C, D and E are out as they change the meaning of the original sentence. The publisher will not necessarily sell the digital works.
Rather, the works would be made available by the publisher to be sold online.

In B, the correct structure would have been:

20 purely digital works to sell them online, either as electronic books or as downloadable copies

C is wrong coz "as" is wrongly placed.

A and E uses either or combination correctly .
Between A and E ,A looks best

In E and followed by a comma is wrong as it introduces a new sentence .

I picked A for this, but wasn't sure about E either.
However, I came across this post from MGMAT site that I think will benefit people here...

your last sentence is spot on: e is wrong because it changes the meaning of the sentence.
* the original - which, remember, you can't change unless it's total nonsense - says that the publisher is making things which will subsequently be sold online, but it doesn't say by whom.
* choice e, on the other hand, asserts that the publisher itself is going to sell the things. that's an immense change in meaning (and moreover, how many publishers sell their own books online?).

This information is particularly valuable to me because I never know that "you can't change [the original sentence] unless it's total nonsense". I always stick with the "intended meaning", but it doesn't apply here in this problem. Both choices equally make sense.

I choose C.
It parallels the as..as.

D is out because the "and selling.." phrase is disjointed.

In timed pressure, I also consider this structure correct, but today see it again. I see that both C and D do not place "as" after "either", but rather, it go before "either"

I would pick A.

B & D do not make sense in the context of the rest of the sentence
C & E change the meaning

In C the first 'as' is not after the either but I was fooled into thinking it was. :(
