My advice for this forum is to NEVER backsolve. Learn the proper techniques since you are not under time constraint. Backsolve only when you are pressed for time or have already spent too long on problem.

Backsolving and substitution as primary techniques can be addicting and counterproductive.

Here's how I solved the question...

Original Sherry = 1
% spirit = 30

Stolen Sherry = x
% spirit stolen = 18

Formula: Original - stolen = remaining

.30(1) - .18(x) = .18(1)
.30(1) - .18(1) = .18x
.12=.18x
x = .12/.18 = 2/3

X is the amount of wine
Y amount was removed
Remaining = (X-Y)
Amount of spirit remaining = 0.3(X-Y)
Now Y is added but it contains only 12% wine
So total spirit left = 0.3(X-Y)+0.12Y = 0.18X
so Y = 0.12X/0.18 = X * 2/3

So 2/3rd wine was stolen.
