If a business school have 29% total acceptance, is it fair to assume that it may have a higher, say 35-40% acceptance among women?

I don't know the EXACT numbers, but that seems like a fair assumption. Maybe even a bit higher. And if you have a strong profile as a female candidate I would say its even better than a strong profile as a male candidate.
