Since it's a general idea que.. the approach has to be
first, eliminate specific choices, so A and D gone
second, C gone as there is no comparison given for effect of exercise on different parts of body
now you have B or E

B could be an ans but its not a logically correct statement, exercise itself is not a mental activity, it is a physical activity only that keeps your brain active, Hence serves the purpose of keeping brain more active

that is E, your final answer

E. Between e and a e seems to cover the main point that is stated in the first line of the passage. excercise contributes to not only the physical body but also to mind and hence serves mote than one purpose. A - refers to only one fact stated in the argument.

E is the only one that really encapsulates the entire point of the argument.

(A) the greater the amount of oxygen the brain receives, the better the brain functions.
While the argument does in essence state this it ignores the points made about exercise.
(B) exercise is a mental, as well as physical, activity.
Exercise may help you mentally but its not necessarily a mental activity.
(C) exercise helps the brain more than it does the rest of the body.
At no point does it state that it helps one over the other.
(D) people can greatly improve their powers of concentration by exercising more often.
This is true to the argument but it misses the point the exercising has physical benefits as well.
(E) exercise serves more than one purpose
Only one that meets all the points made. Therefore has to be the answer.

The blood circulates more rapidly after physical exertion, thus allowing all of the body’s organs to operate more efficiently. This increased activity enables the brain to receive more oxygen, thereby creating a higher capacity for concentration.

The main point in the argument above is that

(A) the greater the amount of oxygen the brain receives, the better the brain functions.
Too generic statement, also nothing about the functioning of brain is mentioned in the passage.
(B) exercise is a mental, as well as physical, activity.
The effect of exercise has an effect on brain.
(C) exercise helps the brain more than it does the rest of the body.
Out of scope.
(D) people can greatly improve their powers of concentration by exercising more often.
Seems closer but in the passage it is said that the capacity of concentration increases and not the power. Also nothing about the improvement of concentration if the exercise is repeated is mentioned.
(E) exercise serves more than one purpose
Is the answer

we're talking about concentration potential... a small part of the brain function. it could have absolutely no bearing on other functions
(B) exercise is a mental, as well as physical, activity.
not really a mental activity... your brain is not getting a workout... it just increases it's potential
(C) exercise helps the brain more than it does the rest of the body.
false. it doesn't say anywhere that one is better than the other
(D) people can greatly improve their powers of concentration by exercising more often.
greatly improve is an exageration here. greatly improve doesn't always mean "valuable"
(E) exercise serves more than one purpose
true. meets the criteria

D is a case of "too strong" answer IMO.
This means that the idea behind is correct, but is too extreme.

The idea of D is correct (people improve their concentration) but can we say that they do so "greatly"?
The text says "creating a higher capacity for concentration."
