I have heard many admissions officers say that they will not accept a combination. However, most data sheets that go with your application will show your GMAT history, so they will be able to see that information. I have also never heard any admissions committee members indicate they lean toward higher verbal scores. Many are on record for wanting a balanced score. They are also on record for wanting to see over 80th percentile on quant, because, as you rightly say, the coursework is very analytical
I'd suggest that you simply mention your higher quant component it very matter-of-factly in your optional essay. I also suggest that you do point out your good grades in calculus and business stats/decision science type courses in undergraduate. They are aware that the tests can get the better of students-- we all know about the HBS class member with the 540, (it's on the HBS class profile page) or have heard anecdotally of someone getting into a top school with a 600 score. Having said all that I have seen many students get into top schools (most recently HBS, Columbia and Yale) with lower quant scores than yours.
