Yes, pursuing the software course can be mentioned, you may also mention how you have grown personally during the three years when you address the employment gap.

The GMAT is valid for 5 years so you can take it once you feel prepared enough to do so. Maybe, six to eight months before the application deadlines would be a good target so that you have enough time to do a retake, if you decide to do so and to focus on the other components of your MBA application.
