Is it fair to assume that most probability questions show up when 700+?

@Dimiter - Probability/Combinatorics is most common at the 700 level, but can also appear in the 600 area. More basic probability questions will be more prevalent at the 600 level while word problems involving choosing teams of committees will be more prevalent at the 700 level..
For those at the 500 to low 600 level, you likely won't see these types of questions. However, if you are shooting for over 700 - you're more likely to see these questions - particularly in word problem format.

What about geometry? at what level do these questions show up and how many can e expect?

Most geometry questions won't involve combinatorics. However, there are a few in the Official Guide that actually involve both coordinate geometry and combinatorics. So it is possible to see a question that combines both elements.
Of course, you'll only see these if you are consistently getting other quant questions correct and the system continually gives you more and more difficult questions - adding elements of combinatorics - possibly mixing them with other subjects like geometry.
Still the basics in the frameworks of variations vs combinations vs permutations at the beginning of the video are fair game for upper 600 level questions.
