Let # of farmers in 1850 and 1880 be f1 and f2 and the population be p1 and p2 respectively.
The passage says:
(f2-f1)/f1 < (p2-p1)/p1
or, f2/f1 < p2/p1
or, f2/p2 < f1/p1
or, percent of farmers in pop @ 1880 < percent of farmers in pop @ 1850
E contradicts this ...

I think it is E. I was about to choose C but C talks about the farmers in the US labor force.
Assume there were 100 people and 68 were famers(68%)
Now the population is 200 and there are 144 farmers(72%)
No of people now = 66
No of people earlier = 32
Increase = 100%
Farmers earlier = 68
farmers now = 144
Increase = more than 100%
