You should list anything you have participated in, but realize that the schools are looking for people who make a commitment and assumed responsibility, not just those who carried a membership card. So make the most of what you've got and in giving information, show yourself in as active a role as you honestly can do.
Also, if you have only be active in one or two of these organization, that's OK, and perfectly normal. We are not usually active and passionate about everything. But if you got involved, make sure that your description shows it.
