Jeepers,
Above all else, you want to proceed through this process ethically. Now, that said, it is not your job to impose an ethical burden on yourself that does not exist. You are not obligated to let your current employer know of your plans to apply and if that precludes you from getting a recommendation letter from your current supervisor, simply state that in the application when it asks you to explain your choices.
As for course work, you are asked to submit your transcripts in support of your earned bachelors degree or any graduate degrees. Transcripts that came after the degree was earned are not relevant, nor are you obligated to share them. And frankly, post-bac classes taken for your own edification are not a relevant indicator of your academic or professional abilities, so it would be hard to imagine an admissions officer caring about how well you did in a random French class you took because you were thinking of spending three weeks in Paris.
Finally, just know that schools are not in the verification business. They don't have the resources and they simply aren't going to trouble themselves to explore a red flag. A red flag is reason enough to shut it down right there. As long as the last decade of your life, post-graduation, is filled with accomplishments that indicate maturity, leadership, teamwork, intellect, innovation, etc., there would be no reason for a school to explore distant relics.
So long as you are not withholding obligatory information or intentionally deceiving, I don't think you have anything to worry about.
