Experience / Education Verification

Hi Alex,
I was wondering, how do schools go about in verifying experience and education? I apologize if this sounds immature, as this was nearly a decade ago. Thanks for your help.
Reasons why I am concerned:
1) After graduation, I had enrolled at other colleges (Not in any degree program, just taking a few courses here and there, some I did awful in because I just wanted to pass). Am I required to list any of these universities that I had attended post graduation? Can i only list the schools/courses that I did well in? Will this be factored into my Gpa? How could schools verify this?
2) On a similar note, I had graduated a semester early during undergrad and basically conned my way into a study abroad program in which my home college did not accept credit. I spent my last semester just partying basically and did poorly. Although, this is not part of my undergradate record, am I required to list this since it was technically a program?
3) How does a school go about in verifying your employment history? I do not want my current employer to find out that I will be applying to grad school. After college, I worked as an unpaid analyst at an investment bank full time for a bit less than a year. I know this is not" legal" and I do not want my former employer to get into trouble as it was my decision.
