How important are the two essays for the GMAT? I rarely hear anyone mention their essay scores. It seems that the essay score can't really hurt or help you unless you do horrible or great.

It doesn't help or hurt as long as you come up with an average performance, i.e. 4.0 or so. The AWA is in place only so that admission committees have a fair idea about your level of writing skills.
A 3.0 on the AWA and stellar application essays will bring up some red flags - did someone else write your application essays for you? Poor application essays and a 6.0 on the AWA won't help at all. And in my own experience, I've never heard of any "serious test taker" getting below a 4.0 on the AWA.
