Another vote for (C) among given choices!

But a small concern,

expression "it is of" won't it be an ambiguous one? as "it" here is not clearly implying to "it" in the first clause!

Any explanation would help.

This is a it-cleft. The it in "as it is of ..." refers back to the the subject of main clause, it. In any case, it = noun clause, that the taste ...
