Hi NYCAnalyst,
If you're not passionate about something, by all means, don't do it! Extracurricular activities and community service are another way for you to demonstrate the four core dimensions that admissions officers look for in every applicant: leadership, maturity, innovation, and teamwork. If you can demonstrate these with other activities (not just pounding nails for Habitat for Humanity once a month), then that's great. Everything you described is fair game. If you're helping young people have a positive experience with sports and competition, I could think of all sorts of great things you could discuss in your essays, as long as it really matters to you.
Also, know that admissions officers will ask in the back of their minds, "How has this person made the community/organization around him better?" The obvious answer is with community service, but even just finding a solution for a problem at work that no one else has solved is another way to demonstrate this.
