Was there any confidentiality agreements you signed as a part of your assignment or contract with the companies? Also, is there any potential issues with you disclosing current clients and ongoing work (i.e. will it reveal any proprietary information)?
When I worked in the semiconductor industry, many times clients were confidential (with agreements) and the nature of the work could be extremely proprietary and so we weren't allowed to state who we worked for, but many times you could put enough supporting information about your work and the nature of your work that anyone could tell who you were working for (i.e. working at a semiconductor fab in Hillsborough, OR you were probably working for Intel).
I've done some work as a consultant in life sciences in Boston and it seemed like everyone knew that people moved around occasionally. Actually for experienced hires and contractors, they looked for specific names to make sure you had relevant experience. I don't think they were too scared about proprietary formulas or "secrets" getting out because a lot of their stuff was public knowledge anyways and they were protected with licenses. However, I was on the engineering side of things, if your work has to do with corporate strategies then information about your work could be considered sensitive.
I would suggest showing a copy of your resume with the companies' names on it to your boss (assuming he knows of your MBA goals) and ask if he thinks it will cause any problems for them. My gut feeling is that he won't have a problem with it, but it doesn't hurt to ask.
