I find it difficult to pick between more than and greater than

Please post the official rules with illustrations - when to use "more than" and when to use "greater than"

I think "more than" can be used with countable and non countable items, but "greater than" has to be used only with countable items.

Good Question. Sorry no examples off the top of my head.
