You've chosen a good range - you should be able to get into at least some of them assuming you don't screw up your applications.

The only thing I'd change is your safety school - given your profile and goals, I'd say Georgetown is a better bet than USC (unless you have some personal reasons for wanting to come to LA).

Don't use a prof (only exception are those few who apply right out of college). And there's no need to over explain your age/experience - an adcom will either care, or they won't, and there's not really a whole lot you can say to sway them one way or another (and it depends on the individual adcom reading your file). Focus on playing offense by highlighting your strengths.
