Absolutely do take notes - my advice is just to say something like "Would you mind if I took notes while you spoke?" -- the interviewer isnt likely to say more than two words back ("sure", "no problem", etc) but it lets them know what you are doing and lets you feel comfortable to scribble. As an added bonus, it gives you something to do with your hands (ever sit there staring at someone? Its actually quite an odd feeling), plus, it demonstrates a genuine interest (you are actually taking note, rather than just asking for the sake of asking).
