I must start by saying I am by far the best person to answer this - it is an extremely tricky question.
From what I have gathered, I do expect there to be conversion from the waitlist - it is tricky for me to speak in terms, but they definitely expect that uninterviewed waitlists will, in some cases, move to interviews. Numbers are impossible for me to say, as I have no idea, but it is spoken in a way that it will happen to some extent, rather than might. The waitlist pre-interview especially (if you get wait-listed post interview, I have no idea). I might get an idea whether a visit would benefit you - I would honestly think talking with them before you planned the visit would be a far better way to express your interest, and potentially save money. I was an international student, and I never visited Stern de-facto until the day I interviewed. I think the belief that visiting and knowing counts less than understanding and fitting with Stern - utter intangible nonsense I know.
