eowyn, I'm sure not receiving an invitation to interview during the SWIB conference has no repercussion on the state of your application. I believe the conference is in early February, so you might as well interview before then and receive a quicker admissions decision.
You may be interviewing at a time when there just aren't a lot of students on campus. For instance, we MBA1 folks don't officially go back to school until January 25. You may want to call Admissions and see what they say - they might be able to offer you a date when the lunch program is actually in effect? I'm fairly certain the scheduling system only gives you a handful of dates to choose from - but there are actually several more slots available.
Unless you're planning on visiting campus again, feel free to PM any real burning questions to me, too.
I would e-mail the Graduate Ambassadors or MESA-at-stern.nyu.edy to see if one of their Admissions or Outreach officers can respond to your questions.
While I do do stuff with MESA, I don't know specifically who to put you in touch with.
