Thanks for the detailed post, makes it easier to provide feedback. First, you have a very impressive profile and have a great chance of getting into some top schools. If you wanted to, you could even apply this year. Waiting is not a bad strategy as your candidacy will only improve with another year, but if you were anxious you would have a decent chance this year as well.
Your experience at Flipkart is impressive. I am familiar with the company as I have worked with them and there are some great stories to tell from that experience. While you don't have a top tier feeder consulting name on your resume, the responsibility and the company will certainly help separate you to some extent from the pack of technical consultants / engineers who are competing for the same spots.
Why did you switch jobs? It doesn't seem on paper as the 2nd job was a big promotion, but perhaps there is more to the story.
GMAT: As you have read everywhere, target 700+, and for someone like you I would imagine you could and should get a 730-740. Not a dealbreaker if you don't, but it would back up your otherwise strong story.
Schools: You have a number to choose from given your experience and desired roles after school. I would recommend looking into these and seeing which ones feel right. Talk with alums, read about the programs and classes, and you can always reach out to me for my off the record thoughts on the programs.

Your profile is impressive and you have a good shot at the top schools, provided everything else comes together with your overall story and brand messaging. Its worth doing some advance planning so your application is buttoned up and ready to go.
