So first, as an Indian unless you studies in US/UK/Australia you DO need a TOEFL!
You do not however need to get your grades converted. You send them as-is, and the B-schools know what to do with them
For your LORs, you can choose whoever would be best for you, you do not have to choose your current supervisor, although it is advised that you have one recommender from your current workplace.
