Hi Andrew,
There are some unique strengths in the profile you've posted here: top business schools will be attracted to your brand-name employment with evident leadership, great international experience and community engagement, as well as the fact that represent a much-desired geography. There is also a weakness or two: the low GPA will be an issue, but you could to some degree obviate that by a stronger showing in the GMAT.
School choices will be crucial: the part-time NYU program is often more broad-minded about lower numbers when an applicant brings a strong professional history and a clear vision for the MBA experience. If you're thinking Columbia J-term, the same applies -- your GPA will remain an issue, but if you can be sure your GMAT is at or around 700, you'll show that you're moving in the right direction.
You might want to expand your search to other top-20 MBA programs in the US, where you will get what you need from the MBA experience but have a stronger shot in comparison to the competition. New York-based schools are excessively competitive simply because of the location; if you can consider other cities in the US, you will have more options, many of which are at least as good as the NY schools.
Hope this helps!
