First, congratulations on your upcoming graduation and your job offer!
So obviously there are a lot of unknowns between now and when you'll apply. But I think you have a good GPA and a solid foundation in business coursework. You've also demonstrated strong leadership in extracurriculars and community activities (definitely keep up this involvement - it will be great to show long tenure with these organizations!). For the schools you mention, a 710 is good but keep in mind that the averages we're seeing right now at those schools is closer to 720/730. So don't be afraid to retake the GMAT if you don't reach your target score on the first attempt, schools will always take your highest.
Your work experience is also hard to evaluate at this point but seems promising in that you'll have built up solid analytical skills and likely work with a broad range of restructuring companies. As you know, VC is a tough field to get into so be thinking about how you're going to make that transition long-term. I definitely encourage you to talk to people in the field or other mentors at your new job to get their take on what it takes to be successful. As for the 2 job options you mention, I don't have a strong opinion on which is better. I'd say from the AdCom's perspective the "better" job is the one that more closely fits with your long-term goals and provides you the most opportunity to develop and stretch key skills - like analysis, teamwork, communication, and initiative.
I don't see any big gaps in your profile at this point
so I'd say mostly just focus on the GMAT now and on a solid start in your new job. A certification, like a CFA, might give you a slight edge if you don't reach your target GMAT score, but I don't think it's a must.
