bozo190101,

I think you do have a chance at NYU part-time. Your career profile is interesting and distinctive and you seem to have enjoyed some atypical success there. Your gender is also a positive. If you have some indication that retaking the GMAT will raise your score (because practice test scores have been higher, for example) then you might consider doing that, but given the May 15 deadline it probably isn't feasible. Better to focus your remaining time on sharpening your essays (driving home leadership, impact) and reco letters (if you're working with your recommenders).
