So first things first:
Do not even THINK about retaking the GMAT. You have a 710. You took it four times already. You seem to have reached your plateau, and since your plateau is high, why would you even think about retaking the GMAT? Especially since at 30 years old you no longer have the time for it. A 710 is good enough to get you into ANY program (yes even Harvard), the question is: what else you got?
You have pretty excellent grades, and are an NIT graduate so that's great. Your WE in the US is a BIG plus to differentiate you from your many many compatriots, and I'd suggest you emphasize that in the essays. You work for a decent company and seem to have a leadership role (though exactly how much was unclear to me.. it especially was unclear whether this leadership was only in projects or if you manage employees).
Your school list is a bit on the ambitious side. Not because there is anything "wrong" with your application... but because of 1. age 2. applicant pool... and those things together can make things a bit tougher.
So your final question about asking for safe schools is a welcome (and intelligent) one.
There are a LOT of schools that can fit consulting as a profile. I would start with Ross and Darden, (which are more competitive than safe) ass Smith and Mays. My suggestion would be to go through the list of schools ranked 20-50 and see which appeal to you and which send lots of folks to Consulting (look at their top recruiters), because these four schools are good ones, but there are more. Keep in mind one thing too (for your life more than MBA).. that once you get to these safe schools the jobs tend to be more regional, so try and choose a school in a region you'd like to work in.
