Nothing you can do about your GPA other than what you've done already -- score well on the GMAT and taking some extra courses and getting A's in them - basically showing that your low GPA wasn't due to lack of brains, but lack of effort/discipline (and that when you do put your mind to it, you are no dummy - hence the high GMAT and the A's on those extra courses). That's all you can do, and it should be enough that adcoms for the range of schools you listed shouldn't be too concerned about. In short, you're targeting the right range of schools - just do the best you can now on the written applications.
