I think you have a realistic set of schools given your background and what you want to do after business school. I normally tell applicants that they should aim to have a Quant and Verbal score both at least in the 80th percentile. Your Verbal score is a tad low, but I don't think it's necessary for you to take the GMAT again.
The key for you will be your essays and letters of recommendation. Your is a job that admissions officers won't be very familiar with, so your LORs will need to help them understand how exactly you demonstrated the attributes that they look for in candidates: leadership, teamwork, and maturity, among others.
Also, it may be a little bit of a reach, but if you really want to do supply chain consulting, think about Carnegie Mellon.
