In short, you should have enough of a shot that they're worth applying to. However, applying to only 3 schools is a risk, because the admissions process is such a crapshoot and a numbers game after a while. To yield 1-2 acceptances, most applicants apply to 4-6 schools in order to maximize their odds.
As for your GMAT, it is good enough - although of course if you are very confident that you can score a 740+ without a lot more prep time, then go for it.
