Thanks for the post and all the details - love it! Let's start with just a few comments on the profile so we're aligned:
Academics: good (maybe great) school, good pre-MBA undergrad, but low GPA. Nothing that'll sink the ship, but a bit on the lower side. Would help if you had a reason but even if you don't, it might be ok
GMAT: good score, starts with a "7". Given your GPA, I'd want it a bit higher for some of the schools you're targeting but it puts you in play at the least.
Professional Experience: Solid. Not much to say here. Assuming you performed well, then a B+ on this front. Well known company, client facing roles, some project based leadership, etc.
Involvement: The interesting thing here is that you have one activity that's very much "helping others" and a few that are very much hobbies and interesting ones at that. Some leadership positions on this front would have been nice to see but you don't just sit at home watching Netflix either!
Story: This will be important for you. S&T, you're right, isn't really where MBAs head. So you'll need to be specific. Very specific. And very well researched. This could sink your application if it isn't done well.
School wise, you have a very broad list. Wharton is...probably not going to happen. But, given your goals, you should apply. Why not? Columbia is a more realistic stretch program. After that, Darden, NYU, and Cornell make sense. Duke, Georgetown, Vandy, and UNC aren't finance schools. Emory could be added to the list though (strong NE presence). Which would put your R1 list at 5.
