Targeted schools (Sustainability / Environmental focus): US: Michigan, Columbia, Georgetown, Duke International: HEC Paris, IE, ESADE, SDA Bocconi
Am I shooting too high? I have some others that I'm more confident, but these are my dream options.

Yes, you are shooting too high at S: Michigan, Columbia, Duke, HEC Paris, IE, and ESADE. You may have a chance at Georgetown and should be reasonably competitive at SDA Bocconi.
