Aringo. I'd like to start by congratulating you on narrowing down your school choices and researching the pros and cons of each one! It is important to have a clear picture of your options.
While your GMAT score is below Rotman's average of 673, it still falls within their generally accepted range (600-740). Moreover, the admissions committee has made clear that acceptance does not hinge on one or two factors exclusively (as is the case with almost every school). By skillfully highlighting your work experience (3+ years is good) as well as your initiatives in the area of e-commerce, you can likely compensate for the weaknesses in your application.
Schulich usually requires a minimum of a 660 on the GMAT as well as a balanced score across all sections (which your verbal score does not quite reflect), but they also accept students with GPAs between 3.0 and 4.0, so you are ahead of the game in that respect. Again, crafting a profile that emphasizes your strengths (GPA, work experience, projects) and also differentiates you from other applicants (it is very important to detail unique characteristics and experiences) can make all the difference and potentially persuade the admissions committee to give less weight to your GMAT score.
The average GMAT score for applicants accepted to McGill is 655, which means, of course, that some fall above and some below.
As the Rotman MBA offers a program that is directly related to your career goals, it may be the best option. It is important to outline your professional ambitions in your applications; the fact that you have a very specific plan will work in your favor. Schools like to see forward thinking.
My recommendation is to apply to all three MBA programs as this will obviously give you the greatest chance of gaining acceptance, but to perhaps focus more of your energy and resources on the Rotman application if you find that your time is limited.
