Please explain

In addition to having more protein than wheat does, the protein in rice is higher quality than that in wheat, with more of the amino acids essential to the human diet.

A the protein in rice is higher quality than that in
B rice has protein of higher quality than that in
C the protein in rice is higher in quality than it is in
D rice protein is higher in quality than it is in
E rice has a protein higher in quality than

Between B and E.

B.. rice correctly modifies wheat and the us of a protein is correct and stick with the original meaning of sentence

E.. "a protein" is incorrect, I believe.

requires rice here for correct modifier

and that in required for correct comparison

B - best.

Comparison is what has "more protein than wheat does" => rice needs to follow. A,C, D => incorrect.
E compares protein in rice with wheat.
