I took the GMAT for the second time a month ago and started getting mail from different business schools about a week ago.

I have a few questions...

1) How did some of these schools find out about me if I never requested information about their programs? Not to mention I haven't sent my scores to these schools either. Ironically, several of the programs who sent me mail I was going to apply to this week.

2) In many of the letters accompanying the packets, they told me that I am an ideal candidate for their program. Not only that, a few of them said that past candidates with similar credentials were accepted to their programs.

While this is great and encouraged me, how serious are these letters? Do they really mean what they say? That I am an ideal candidate for their program?

You're receiving those messages through the GMASS database. Schools send those emails/letters out to thousands(?) of potential applicants each year. I wouldn't give the messages too much thought, unless they make you feel good :)
