Please correct me if I am mistaken:
Subject: All
Prepositional phrase: of us boy scouts
noun phrase: us boy scouts; which is also the object
verb: are going camping
modifier: this weekend.


I'm not very sure but I think

Subject : All of us (The entire phrase is the subject)
Appositive: boy scouts
Verb : are going camping
Modifier: this weekend.

This is just my opinion. An expert's advice would throw better light.
