I volunteered my technical skills for building a toolkit for a non profit a couple of years back. I spent some months on it, but didn't continue it mostly for the lack of time. I was wondering if I can use it in the material for my essays? Should I obtain a reference to substantiate it?

You can absolutely talk about it. Volunteering doesn't have to be an ongoing activity. No need to get a reference, unless it comes up in the post-admit background check.
