What happens if you give your recommenders the first round deadline, but you dont get your essays in on time and have to submit 2nd round? do the reccomendations go into your 2nd round file i'm assuming?

my understanding is you just have an online 'application' and that application is not affiliated with any round.
when your application is complete, you submit it, and it will be processed in whatever round is currently active.

The attitudes vary from school to school.
Most of the schools I applied to would allow you to submit an application without all of the references being submitted. As long as the references were completed within a day or two after the deadline, there was no problem.
This topic will usually be covered in a school's Admissions FAQs, on online chats, etc.
