Eliminate A and B becuase animals is plural and so "exhibit" and not "exhibits".

In c,d and e among : a preference in ,a preference for, a preference asto, i think the idiom" a preference for " is correct.

E is stiill awakard with " and includes" .

IMO is D.

i think answer is A.

"includes" which is a singular verb correctly refers to the singular subject "list".

IMO, D

exhibit or exhibits? > subject is "animals", thus it should be "exhibit"

preference for? in? of? >
"preference for X" means "prefer X"
"preference in X" means "like or dislike in X",
"preference of X" means "X's favorite"
thus here should be "preference for"

where is the position of "either"? >
"either using the right or the left hand" (<this is not parallel !!)
"using either the right or the left hand" (<completely parallel !!)

answer is D.

split the answer choices:

A,B - exhibits
C, D, E - exhibit

1.So, first of all decide here who and what exhibit.
Lets think a bit who/what is exhibiting the use of right or left hand ? definately not the list :), so animals exhibit, A,B are out
2.Remained answer choices C,D,E
preference - sincerely i did not know this idiom before, thus I have done the following:
C- is wrong, because "either using" ....OR (may be not using) should follow. it does not. the intended meaning is using one of the hands, EITHER left OR right C, so is out
D- to include seems right for me , as indicates the purpose "list ...blah, blah... has been expanded (FOR WHAT? WHY?) to include. D seems ok for me.
E- AND means parallel constructions, lets see whether "has been expanded AND includes" are parallel. NO!, moreover, funny to imagine for a sec. "the list .......that includes lower vertebrates". E is out

Cambridge Dictionary says:
Preference for - when you like something or someone more than another person or thing:
Her preference is for comfortable rather than stylish clothes.
Preference to - an advantage which is given to a person or a group of people:
We give preference to those who have worked with us for a long time.
