Sign contract/agreement when hiring an admission consultant?

I utilized one of the "big" consulting companies this current application cycle for hourly services. There were official terms and conditions that I had to electronically accept when I submitted payment online (there is no promise I'll get in, refund terms, I can only submit my own work, etc).
Then there was a guidelines sheet (PDF) my consultant sent me that went over things like naming of files, how long review of a document will take, what constitutes a holiday/weekend, what counts as billable time, etc.
Either way, I believe this is standard practice. I wouldn't necessarily be concerned that you didn't sign. Most of what I accepted as official terms and conditions were to protect the company, not me.
What is your concern/fear?
