A is incorrect because because of how the first and second part of the sentence are being compared.

C is incorrect because the first part of the sentence is in the present-tense, while the second half is in the past-tense.

D is the same as C.

E is incorrect because "as" is not being used correctly. Nouns are compared with "like", while clauses are compared with "as".

(A) Similar to rising interest rates, consumer and producer prices have been rising.—wrong comparison between interest rates in the first part, which is a noun and a clause in the second part.
B) Consumer and producer prices have been rising, as have interest rates. --- The verb ‘been’ is elided after have in the second part, turning the comparison correct.
(C) As interest rates are rising, so have consumer and producer prices. –This implies a cause and effect, which is not the case.
(D) Consumer and producer prices have been rising, like interest rates do.—using a clause with like is wrong.
(E) Consumer and producer prices, as interest rates, have been rising.—calling consumer and producer prices as interest rate is bizarre

(A) Similar to rising interest rates, consumer and producer prices have been rising.
Here, "rising interest rates" is compared with "consumer and producer prices"
(B) Consumer and producer prices have been rising, as have interest rates.
Correct
(C) As interest rates are rising, so have consumer and producer prices.
are rising and have consumer are not parallel.
(D) Consumer and producer prices have been rising, like interest rates do.
like interest rates do is wrong as like is only used to compare nouns.
(E) Consumer and producer prices, as interest rates, have been rising.
as interest rates is wrong, we need an action if we need to use as...
