I do recommend you consider taking the GMAT test again. The reason is, let's consider Chicago Booth for example, which is similar to the programs you are looking at. The average GMAT score is 720, with an 80% score range of 660-760. This means that if you applied with your score, your score would be in the bottom 10th percentile. This does not necessarily mean you would not be accepted, however it is not a preferable position to be in.
Rolling admissions means that applications are considered as they arrive. With rolling admissions, the earlier you apply to a program, the better.
