"that" is necessary here. so A is correct.

I go with "A".

If you take out the "of .... " construction you will notice that, "that the elephant ... " is needed

as a humorous example (....) that the elephant...

A. that the elephant that gave rides to children at the Whipsnade Zoo was earning
makes sense

B. that the elephant, giving rides to children at the Whipsnade Zoo, had been earning
no need to use past perfect .. "had been.."

C. that there was an elephant giving rides to children at the Whipsnade Zoo, and it earned
too wordy. In addition, I think, the "it" in "it earned" does not have clear antecedant. It could refer to the "zoo" or the "elephant". Though only "elephant" makes sense

D. the elephant that gave rides to children at the Whipsnade Zoo and was earning
does not use "that", hence out

E. the elephant giving rides to children at the Whipsnade Zoo and that it earned
does not use "that", hence out

A.

for the simple past tense in both the clause.

A. that the elephant that gave rides to children at the Whipsnade Zoo was earning ..............
then earned as director of adult education for London.

Yup agree with A...

I believe there is no need for the use of 'had been'
