I guess this question is about the redundency. Only C gets rid of the redundancy. A sounds good to the ear.

of course, (a). you forget about "caesar, greens.." and other bloody stuff, and you'll have it! "the salad options were delectable". others, on contrary, do not have such sequence.

Surat..you rule....
This example requires the correct subject-verb agreement.
Choice B pairs each with were - singular subject with the plural verb. Choice E also pairs the singular subject (in this case every one) with the plural verb were.
Choice D has the plural subject salads incorrectly paired up with the singular verb was.
In choice C the subject salad options agrees with were, however the placement of each of the salad options destroys the flow of the sentence - each cannot be the plural salad options.
Choice A is best - salad options/were, and proper sentence structure

A is definably not a good option compared to C.
I agree that C looks awkward.
But A is trying to equate options with salads. That is definably a NO-NO
answer in GMATland.
Let us dissect the answer A.
A) The salad options - Caesar, mixed greens, spinach, and cucumber - were all delectable and inviting salads.
If you remove all the meat of this sentence, we end up with the following sentence.
тАЬoptions were saladsтАЭ. That distorts the meaning of the original sentence and a NO-NO
