Linda/Paul,

Can you please provide some insight? I was curious how adcoms view a candidate who took 5 years to complete their undergrad degree. I spent one year at a community college and an additional four years at a 4-year institution. I attended full-time each semester, graduated with a double major, high GPA, and several internships. However, the reason why I took a longer to graduate was because I had changed my major and took a few additional elective courses that were not needed for my degree. Is this something I should address in an optional essay?

Yes, you should address that *briefly* in your optional essay. It's not something for you to worry about. Just explain what made you realize you needed to change majors.
