3.RC - 6 min to read + 0.3-0.5min*number of questions on the passage
4.PS - 2mins/Q
5.DS - 1 mins/Q

It is not precise but reflects my estimates.

It seems like I'm taking about 1-1.5 on DS, around 2 for PS. I always finish verbal about 20 minutes early, so I don't even bother timing those.

On a related note, if you're moving along okay and you come to a problem that you're having trouble with, do you take the extra time or do you still just guess and assume you'll use up that time on a longer question you feel more comfortable with?

depends on if you're early on in the section or in the later parts of the section.
early - take more time - can allow yourself to use more time if you know you'll likely be able to make it up

later - use POE and guess as needed without spending too much time - you won't have as many chances to make up for lost time

I agree with this. On many of my practice tests, I would have to guess on the last 2 or 3 quant questions if I spent a little bit extra on the first questions. And still pulled a 49-Q (I ended up guessing on the last couple on my actual GMAT too).

As for timing:
All quant questions, I would give about 2 minutes
SC - 1 minute
CR - 1.75 to 2 minutes
RC - 3.5 to read the section, then 1.25 per question

So my timing was pretty standard, nothing special.
