Is my gpa a deal breaker. I have a very low gpa of just 2.87 from a top 10 engineering school (CMU).
I took 5 years to graduate. I failed classes as well. I did poor.
Now I have 8 years of experience as an engineer with a GMAT score of 720.
I am very confused about the schools I can aim for with this profile.
How much of a concern is my poor gpa today?

Even though your academic record will not go away, try to focus on your experience in your application. Especially on what you did in the last 2 yrs. Your most recent endeavors will overshadow what happened 8 yrs back - but you must handle your application delicately.
I would strongly recommend you to hire the services of an admissions consultant if you are serious about an MBA from a top 20 school. A consultant can guide you on how to portray your profile honestly in the best light. Check out our team here:
