Yes, letters of support can keep you on the admissions department's radar screen, and in your case it would be helpful if the writers could comment on your verbal skills, if they have knowledge of them. Additional wait-list letters spaced every 3 to 4 weeks or so can also help, and you may want to directly address the verbal skills issue in these letters by providing evidence that shows your verbal skills are better than your GMAT score suggests. However, I think the UNC adcom is being candid with you that you will probably not be admitted, so don't count on the letters helping you very much.
