There are many benefits to timing your practice, including:
I have no idea if this is what schools mean by "maturity" but when I interview people for a job, I consider their maturity and think of it in terms like this:
1. took on tasks requiring great responsibility
2. learned from mistakes
3. able to function as a team member (eg no whining, bitching, undermining of others and/or the team goal)
4. doesn't try to steal credit for other's (or a team's) success
5. admits responsibility for mistakes and devises a plan to correct them
6. succeeded in a task despite numerous setbacks (perseverance)
7. treats others with respect
8. recognizes that, "reasonable people can disagree"
I'm sure there are tons more, but those came to mind immediately.
Edit: Another came to mind today. And since I'm just dying to have "10" ...
10. takes constructive criticism well.

I think Monsieur Rust said it very well, and listed all the stuff that immediately sprang to my mind.
The other thing I would add is introspection and self-evaluation. I think these two activities are prerequisite to a lot of the stuff RM listed.
That said, it seems unlikely that someone would ask you to describe a time you showed maturity. It's more likely they'd ask you to describe challenging situations, lessons learned, and interactions with others. Your responses would then indicate your maturity.
