the premise says that the organic matter is found to be 1000 years old, so it follows that the monument is also 1000 years old
but what if the stone is reused from other architechture to build the monument shortly before 1492, but the architechture it self is 1000 years old when the stone is trimmed~

The above explanation given by YangYichen seems sufficient. Yet I would add a bit more in case there are still some doubts:

If the organic substance found on the stone is 1000 years old, then the trimming of the stone must have been done 1000 years ago (sometime in 1000's). It is possible that something (say a statue) was constructed using the stone 1000 years ago (immediately after the stone was trimmed). Later on (in 1492) the statue may have been demolished and the stone may have been reused (option B) to construct the Andean monument. Thus the belief that the Andean monument was constructed in 1492 is still justifiable (if option B is true), and the claim that the monument was built long before 1492 is weakened.
