I am looking over the essays for a particular school. Two of the essays would require me to describe a situation related to my goals. Can I fully describe the situation in one essay and then refer to it in the second essay in the form of, "As I mentioned in essay 2, blah blah blah," or is it better to treat each essay as a separate entity?
I dont thing its a good idea, since you are supposed to show varied experiences and the different facets of your personality across various essays. In my opinion, referring among essays might say that you dont have as many unique stories to tell.
I dont think it means you have less stories to tell, I just think its just somewhat sloppy writing. You ever read a novel that referenced its own chapters?

That said, people do it, and you can certainly get away with it, it just breaks the readers concentration unnecessarily ("Wait, what was in essay 2? Oh yea... that story about X... Ok... Oh wait, where was I?")
I think if it's something that doesn't require an explicit reference then it's okay. For instance if essay 1 is you talking about your detailed plan for breaking into management consulting, then in essay 2 you're talking about why you want to go to this particular school, you could say, "And this is in line with my goal of transitioning into managment consulting..."
But like Rhyme said, if you're making a specific reference to "the time that I experienced [fill in the blank] as outlined in esay 1" it might seem a little awkward.
